In a medium bowl, combine the softened cream cheese with soy sauce, sesame oil, minced garlic, grated ginger, salt and black pepper. Beat with a spatula until smooth and well blended.

Fold in the finely chopped crab meat and sliced green onions until evenly distributed. Taste and adjust seasoning (add a pinch more salt or 1/2 tsp soy sauce if needed).

Cover the bowl and chill the crab mixture in the refrigerator for at least 30 minutes to firm up (this makes shaping easier).

Shaping and breading

Prepare a breading station: place flour in one shallow bowl, beaten eggs in a second bowl, and panko breadcrumbs in a third bowl. If the flour feels dry, season it lightly with a pinch of salt.

After the crab mixture has chilled, scoop roughly 2 tablespoons of mixture (about 1 ounce) and shape into small oblong croquettes or rounds using lightly oiled hands. You should get about 16–20 croquettes depending on size.

Dust each croquette lightly in flour, shaking off excess, then dip into the beaten eggs, letting excess drip off, and finally press into the panko breadcrumbs to fully coat. For an extra-crispy shell, repeat the egg and panko step for a double coating.

Place finished croquettes on a baking sheet and refrigerate for 10–15 minutes to help set the coating (optional but recommended).

Frying

Pour oil into a heavy skillet or shallow pot to a depth of about 1/2 inch (enough to shallow-fry). Heat oil over medium heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of panko—if it sizzles and browns in about 30–40 seconds, oil is ready.

Working in batches to avoid crowding, carefully add croquettes to the hot oil and fry until golden brown on one side, about 2–3 minutes. Turn and fry the other side until evenly golden, another 2–3 minutes. Total cook time per croquette should be about 4–6 minutes depending on size.

Use a slotted spoon to transfer fried croquettes to a wire rack or paper towel-lined plate to drain. Keep warm in a 200°F (95°C) oven while finishing remaining batches, if desired.

Sambal sweet chili glaze & finishing

While frying the last batch, make the glaze: in a small saucepan or microwave-safe bowl combine sweet chili sauce, sambal oelek, rice vinegar, and honey. Warm gently over low heat (or 20–30 seconds in microwave) and whisk until smooth and slightly thinned but not watery. Taste and adjust the heat/sweetness—add more sambal for heat or more honey for sweetness.

Brush or drizzle a thin layer of the warm sambal sweet chili glaze over each croquette, then immediately sprinkle with furikake seasoning and optional toasted sesame seeds so they adhere. If you prefer, serve extra glaze on the side for dipping.

Arrange croquettes on a serving platter, garnish with lime wedges, and serve hot. Squeeze a little lime over each before eating if desired.
