par-cook potatoes

Place diced potatoes in a pot and cover with cold water. Add a pinch of salt. Bring to a boil and simmer 5 minutes until just tender but not falling apart. Drain and pat dry with a kitchen towel.

pan-fry vegetables

Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chopped onion and diced bell pepper and cook 3–4 minutes until softened and starting to brown. Transfer to a bowl and set aside.

crisp potatoes

Return skillet to medium-high, add remaining 1 tablespoon olive oil. Add the drained, dried potatoes in a single layer. Let cook undisturbed for 3–4 minutes to form a crust, then toss/flip and continue to cook 6–8 minutes, stirring occasionally, until golden and crisp on most sides.

season and finish

Return onion and pepper to the skillet with potatoes. Sprinkle smoked paprika, garlic powder, 3/4 tsp salt and 1/4 tsp black pepper. Stir to combine and cook 1–2 minutes more to marry flavors. Taste and adjust seasoning. Remove from heat and stir in chopped parsley if using. Keep warm.

cook bacon

In a cold skillet arrange 8 bacon strips in a single layer. Cook over medium heat, turning occasionally, until crisp and browned, about 8–12 minutes depending on thickness. Transfer bacon to a paper-towel-lined plate to drain. Reserve about 1 teaspoon bacon fat in the pan if desired; discard excess.

toast sourdough

Heat a clean skillet or griddle over medium heat. Spread 1/2 tablespoon butter on one side of each sourdough slice. Place buttered side down and toast until golden, about 2–3 minutes; flip and toast the other side for 1–2 minutes until both sides are golden and slightly crisp. Remove and keep warm. (Alternatively grill slices on the griddle.)

fry eggs

Wipe skillet clean and add 1 teaspoon vegetable oil and 1/2 tablespoon butter over medium-low to medium heat. Crack eggs into the pan (work in two batches if necessary). Cook until whites are set and edges are slightly lacy, 2–3 minutes for runny yolks or longer for firm yolks. Season eggs with 1/2 tsp salt and 1/4 tsp black pepper. If desired, cover pan for 30–45 seconds to set the tops. Remove eggs gently with a spatula.

assemble sandwiches

Spread about 1/2 tablespoon homemade berry jam on the inside of two toasted sourdough slices. Top each jam-spread slice with one slice of sharp cheddar, two bacon strips, one fried egg, then another slice of cheddar. Cap with remaining toasted sourdough slice (buttered side out if you prefer).

finish and serve

If you want the cheese melted, return assembled sandwiches to the warm skillet, cover, and cook 1–2 minutes over low heat until cheese softens. Slice sandwiches in half and serve immediately with home fries on the side.
