Prepare cocktail

Add white rum, light coconut rum, fresh lime juice, fresh orange juice, pineapple juice, passion fruit puree (or juice), simple syrup, and Angostura bitters into a cocktail shaker.

Shake

Fill the shaker with ice (preferably crushed), cap and shake vigorously for about 12–15 seconds until the outside of the shaker is cold and slightly frosted. This chills and dilutes the drink to balance acidity and sweetness.

Strain

Fill a double old-fashioned glass or large Collins glass with fresh crushed ice. Double-strain the cocktail over the crushed ice to remove any fruit pulp and shards of ice, allowing a smooth texture.

Top and finish

If desired, add a light additional splash (about 0.25 oz) of pineapple juice on top for aroma and to brighten the presentation. Gently stir once with a bar spoon to integrate the top layer.

Garnish & Serve

Garnish the drink with a pineapple leaf or a pineapple wedge on the rim, tuck a fresh mint sprig beside it, and float a lime wheel on top of the ice.

Optionally grate a pinch (about 1/8 tsp) of fresh nutmeg over the drink for a warm aromatic note. Serve immediately with a straw.
