Blackened Salmon

Prepare spice blend and salmon

In a small bowl combine smoked paprika, black pepper, onion powder, garlic powder, dried thyme, dried oregano, cayenne, and kosher salt. Pat the salmon fillets dry with paper towels. Lightly brush both sides of each fillet with olive oil (about 1/2 tbs per fillet) so the spice rub adheres.

Apply rub

Generously press the spice blend onto the flesh side and lightly on the skin side of each fillet so there is a uniform coating. Let rest at room temperature for 10 minutes while preparing pans.

Cook salmon (stovetop & finish)

Heat a large heavy skillet or cast-iron pan over medium-high heat until very hot (about 3–4 minutes). Add 1 tbs olive oil and 1 tbs unsalted butter; swirl to coat. Place salmon fillets skin-side down (away from you) and press gently with a spatula to ensure even contact. Sear for 3–4 minutes without moving until the edges begin to turn opaque and skin is crisp. Flip carefully and sear flesh-side 1–2 minutes for medium-rare (internal temp 120–125°F/49–52°C) or 3–4 minutes for medium (125–135°F/52–57°C). Add the final 1 tbs butter to the pan and spoon the melted butter over the fillets for 30 seconds. Remove to a warm plate and tent loosely with foil to rest 3–4 minutes.

Saffron Corn Purée

Bloom saffron

Place saffron threads in a small bowl and pour 2 tbs hot water over them. Let steep 5–10 minutes to release color and aroma.

Sweat shallot and reduce

In a medium saucepan over medium heat, melt 2 tbs butter. Add the finely chopped shallot and sauté until translucent, about 2–3 minutes, without browning.

Cook corn

Add the corn kernels to the pan with the shallot and cook, stirring, for 3–4 minutes until heated through and slightly softened. Pour in 1/2 cup stock and simmer 2–3 minutes to concentrate flavor.

Blend purée

Transfer corn mixture to a blender or use an immersion blender. Add the bloomed saffron and its soaking liquid, heavy cream, whole milk, and a pinch of salt and pepper. Purée until smooth, about 30–60 seconds (for a silkier texture strain through a fine-mesh sieve back into the saucepan).

Finish purée

Warm the purée gently over low heat, taste and adjust seasoning with up to 3/4 tsp salt and 1/4 tsp pepper. Keep warm over the lowest heat, stirring occasionally. Stir in sliced chives if using just before serving.

Succotash

Sauté aromatics

Heat 1 tbs butter and 1 tsp olive oil in a sauté pan over medium heat. Add the minced shallot and cook 2 minutes until soft. Add the garlic and cook 30 seconds until fragrant.

Add vegetables

Add the corn kernels, lima beans (or edamame), and diced red and yellow bell peppers. Sauté, stirring frequently, until the vegetables are tender-crisp and bright, about 4–5 minutes.

Season succotash

Stir in fresh thyme leaves, lemon juice, salt, and pepper. Cook 1 minute to marry flavors. Taste and adjust seasoning. Remove from heat and keep warm.

Plating & Finish

Spread approximately 1/3 cup saffron corn purée in the center of each warmed plate and smooth into a shallow well with the back of a spoon.

Spoon about 1/2 cup succotash beside or slightly on top of the purée to create contrasting textures and color.

Place a blackened salmon fillet on top of the purée and succotash, skin-side down if not already. Spoon any resting butter from the pan over the fillet for gloss.

Garnish with chopped chives or microgreens and a lemon wedge on each plate. Serve immediately.
