Build and stir

Combine rye whiskey, Averna, sweet vermouth, amontillado sherry, simple syrup, Angostura bitters, and orange bitters in a mixing glass filled halfway with ice.

Stir briskly for 30–45 seconds until well chilled and properly diluted (the glass should become frosty and the liquid slightly viscous).

Strain the mixture into a chilled rocks glass over a single large ice cube or sphere.

Garnish

Express the oils of the orange peel over the surface of the cocktail by holding the peel skin-side down over the drink and giving it a firm squeeze, then rub the peel around the glass rim and drop it into the drink.

Serve immediately. Sip slowly to appreciate the interplay of bitter and sweet with oak and spice notes.

Optional barrel-aging (batch prep)

Prepare batch

In a clean vessel (pitcher or mixing container), combine 16 oz rye, 8 oz Averna, 4 oz sweet vermouth, 2 oz amontillado sherry, and 2 oz simple syrup. Stir to integrate.

Decant the combined batch into a small toasted/charred oak barrel (or into a 1 L glass bottle with a small amount of sterilized charred oak chips). Fill to minimize headspace and seal.

Age the blend for 5–14 days, checking daily after day 5. Taste every 2 days: you want a subtle integration of oak and mellowing of the amaro without over-oaking. Typical target is 7–10 days depending on barrel toast and ambient temperature.

When desired flavor is reached, transfer the aged mixture back to a clean bottle. Add bitters to taste (start with the equivalent of 2 dashes Angostura and 1 dash orange per 3 oz of finished cocktail; adjust). If the batch tastes too sweet or heavy, add small amounts of sherry or dry vermouth to balance.

To serve from the batch: pour 3 oz of the aged blend into a mixing glass with ice, stir 30–45 seconds, and strain over large ice in a rocks glass. Garnish with orange peel as above.

Store leftover aged batch in a sealed bottle in a cool, dark place for up to 6 weeks; flavor will continue to evolve slowly.
