Dry shake
If using egg white, add rye whiskey, aged rum, demerara syrup, amaro, lemon juice, orange bitters, Angostura bitters and egg white to a shaker. Dry shake (no ice) vigorously for 12–15 seconds to emulsify and build a silky foam.
Wet shake
Add a generous handful of ice to the shaker. Shake vigorously for 12–15 seconds until the shaker is well chilled and exterior is frosty.
Straining & Serving
Double strain (using a Hawthorne and fine mesh strainer) into a chilled coupe or Nick & Nora glass. If not using egg white, simply shake with ice for 15–20 seconds and fine strain into the chilled glass.
Express an orange peel over the drink to release oils, then rim the glass with the peel and drop it in or place a dehydrated orange wheel on the rim. Optionally garnish with a single micro basil or mint leaf placed on the foam.
Notes & Safety
If concerned about raw egg white, use pasteurized egg white or 3/4 oz aquafaba as a vegan substitute; adjust shaking times similarly. Taste and adjust: if the drink is too tart, add 1/4 oz demerara syrup; if too sweet, add 1/4 oz extra lemon.
