Marinade
Prepare chicken
Trim excess fat from the chicken thighs and pat them dry with paper towels. If thighs are large, cut into 1.5–2 inch pieces for even cooking.
Make marinade
In a large bowl, whisk together the yogurt, lemon juice, vegetable oil, minced garlic, grated ginger, paprika, ground coriander, ground cumin, turmeric, cayenne, kosher salt, and black pepper until homogenous.
Add chicken to the marinade, stirring to coat each piece thoroughly. Cover the bowl with plastic wrap or transfer to a zip-top bag and refrigerate for at least 1 hour and up to 8 hours (overnight for best flavor).
Cooking
Bring to room temperature
Remove marinated chicken from refrigerator 20–30 minutes before cooking to take the chill off for more even cooking.
Sear chicken
Heat a large skillet over medium-high heat and add 1 tablespoon neutral oil. When oil shimmers, add chicken pieces in a single layer without overcrowding (work in batches if necessary). Sear until golden brown on the first side, about 3–4 minutes, then flip and sear the other side 2–3 minutes. The goal is good color, not full doneness.
Finish in oven
If using an ovenproof skillet, transfer it directly to the preheated oven. If not, transfer seared pieces to a rimmed baking sheet. Roast until internal temperature reaches 165°F (74°C), about 8–12 minutes depending on piece size. Remove chicken to a platter and tent loosely with foil to rest while you make the glaze.

In the same skillet used for searing (wipe out excess burnt bits but keep fond), melt the butter over medium heat. Add the brown sugar and stir until it begins to dissolve and foam, about 1 minute. Add apple cider vinegar, soy sauce, honey, smoked paprika, and optional hot sauce. Stir and simmer gently for 1–2 minutes until glossy and slightly thickened. Taste and adjust seasoning—add a pinch of salt if needed or a little more vinegar/honey to balance.
Coat chicken
Return the roasted chicken pieces to the skillet and toss or spoon the glaze over them until evenly coated. Heat together 1–2 minutes so the glaze adheres and becomes shiny. If glaze becomes too thick, add 1–2 teaspoons of water to loosen.
Finish & Serve
Transfer glazed chicken to a serving platter. Sprinkle with chopped cilantro and sliced green onions. Serve immediately with lemon wedges on the side so diners can squeeze fresh lemon juice over the chicken.
Suggested accompaniments: steamed rice, herbed couscous, or a crisp salad. Leftovers can be reheated gently in a skillet over low heat with a splash of water to loosen the glaze.
