Make honey syrup (if not prepared)

Combine equal parts honey and warm water (for example 1/4 cup honey + 1/4 cup warm water). Stir until fully combined and cool before using. Store refrigerated for up to 2 weeks.

Dry shake

In a cocktail shaker, add Ford's Gin (2 oz), fresh lemon juice (0.75 oz), honey syrup (0.5 oz) and egg white (0.5 of a large egg). Do not add ice yet. Seal the shaker and shake vigorously for 15–20 seconds to emulsify and create foam.

Wet shake

Open the shaker, add a big handful of ice (about 1 cup). Seal and shake again vigorously for 10–15 seconds, until well-chilled and the shaker is very cold to the touch.

Double strain and serve

Double-strain the cocktail into a chilled coupe or Nick & Nora glass using a Hawthorne and fine mesh strainer to remove ice shards and achieve a silky texture.

Finish with bitters and garnish

Add 2 dashes of Angostura bitters on top of the foam. Optionally use a toothpick to create a small pattern. Garnish with a lemon twist or a thin lemon wheel on the rim.

Serve immediately. The cocktail serves one and should be enjoyed fresh while the foam is firm and aromatic.
