Preparation and Cooking
Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into even-sized fries, about 1/4 inch thick.
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).
Fry the Potatoes
Carefully add the cut fries to the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt immediately.
Prepare the Gravy
In a saucepan, heat the brown gravy over medium heat until warm. Stir occasionally.
Assemble the Smothered Fries
Place a generous portion of fries on a serving plate. Pour the warm brown gravy over the fries, then sprinkle the mozzarella cheese on top.
Melt the Cheese
You can place the assembled fries under a broiler for 1-2 minutes to melt the cheese if desired.
Serve
Serve immediately while hot and enjoy your smothered fries!
