Prepare the Beef Tips

Season the beef tips with salt and black pepper. In a large skillet, heat the olive oil over medium-high heat. Add the beef tips and sear until browned on all sides, about 5-7 minutes. Remove the beef from the skillet and set aside.

Sauté the Vegetables

In the same skillet, add the sliced mushrooms, minced shallots, and minced garlic. Sauté until the mushrooms are browned and the shallots are translucent, about 5 minutes.

Make the Demi-Glaze

Pour in the red wine, scraping the bottom of the pan to deglaze. Add the beef broth, Worcestershire sauce, and thyme. Bring to a simmer and reduce the sauce for about 10-15 minutes until slightly thickened.

Combine and Finish

Return the beef tips to the skillet, cover, and simmer for an additional 10 minutes until the beef is tender. Stir in the butter before serving.
