Caramelize the Onions

In a skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are soft and caramelized, about 20-25 minutes. Set aside.

Prepare the Rosemary Aioli

In a small bowl, mix together mayonnaise, chopped fresh rosemary, salt, and black pepper. Adjust seasoning to taste.

Cook the Burger Patties

In the same skillet, add another tablespoon of butter. Cook the Angus burger patties over medium-high heat for about 4-5 minutes on each side, or until they reach your desired doneness. During the last minute of cooking, place a slice of Swiss cheese on each patty to melt.

Assemble the Patty Melt

Spread the rosemary aioli on one side of each slice of sourdough bread. On two of the slices, layer the caramelized onions and then place the cheeseburgers on top. Top with the remaining slices of bread, aioli side down.

Toast the Sandwich

In the same skillet, add a little more butter if needed, and toast the assembled patties over medium heat for about 3-4 minutes on each side, or until the bread is golden brown and crispy.

Serve

Once toasted, remove from heat, cut in half if desired, and serve hot with your favorite side.
