Prepare the Chips

Peel the potatoes and cut them into thick chips. Rinse them in cold water and then dry thoroughly with a towel.

Fry the Chips

Heat the vegetable oil in a large pot or deep fryer to 350°F (175°C). Fry the chips in batches for about 5-6 minutes until they are golden brown. Remove and drain on paper towels.

Prepare the Batter

In a bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer, whisking until smooth.

Fry the Fish

Dip each cod fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes, or until golden brown and cooked through. Remove and drain on paper towels.

Make the Horseradish Mayonnaise

In a small bowl, mix together the horseradish sauce and mayonnaise until well combined.

Serve

Plate the crispy fish alongside the pub chips and serve with the horseradish mayonnaise on the side.
