Burger Preparation
Prepare the Bean Mixture
In a large bowl, mash the black beans with a fork or potato masher until mostly smooth. Leave some chunks for texture.
Mix Ingredients
Add the cooked rice, sweet corn, diced bell pepper, diced onion, minced garlic, cumin, chili powder, salt, black pepper, bread crumbs, and the egg to the mashed beans. Mix well until fully combined.
Form the Patties
Divide the mixture into 4 equal portions and shape each portion into a patty.
Cook the Patties
Heat oil in a skillet over medium heat. Add the patties and cook for about 5-7 minutes on each side or until golden brown.
Prepare the Rolls
While the patties are cooking, you can toast the Kaiser rolls lightly if desired.
Assemble the Burgers
Place the cooked black bean patties on the Kaiser rolls. Top with avocado smash and Baja sauce, and add a slice of cheese if desired.
Serve
Serve the burgers warm with your choice of sides.
