Prepare the Bangers

In a large skillet, heat olive oil over medium heat. Add the sausages and brown them on all sides.

Simmer in Stout

Once browned, add the stout beer to the skillet. Cover and simmer for about 20 minutes until the sausages are cooked through.

Grill the Bangers

Preheat the grill. Remove the sausages from the skillet and place them on the grill for about 5-7 minutes until they are nicely charred.

Make the Mashed Potatoes

While the sausages are grilling, peel and chop the red potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and mash with butter, milk, salt, and pepper to taste.

Prepare the Red Onion Reduction

In the same skillet used for the sausages, add sliced red onions. Cook over medium heat for 5 minutes. Add sugar and apple cider vinegar, and cook until the onions are caramelized and the liquid is reduced, about another 10 minutes.

Serve

Plate the mashed potatoes, top with the grilled sausages, and drizzle the red onion reduction over. Serve warm with a side of homemade applesauce.
