In a heatproof bowl, combine the dark chocolate and heavy cream. Place the bowl over a pot of simmering water (double boiler) and stir until the chocolate is completely melted and smooth.

Melt the Chocolate

Remove the bowl from heat, and stir in the vanilla extract and a pinch of sea salt until well incorporated.

Add Flavorings

Cover the bowl with plastic wrap and refrigerate for about 1-2 hours, or until the mixture is firm enough to scoop.

Chill the Mixture

Once chilled, use a melon baller or teaspoon to scoop out small portions of the chocolate mixture. Roll each portion into a ball with your hands.

Form the Truffles

Roll each chocolate ball in cocoa powder to coat evenly. Place the finished truffles on a parchment-lined baking sheet.

Coat the Truffles

Refrigerate the truffles for another 30 minutes to set.

Refrigerate Again

Choose three types of wines fitting the style mentioned: a sweet red, a sweet white, and a dessert wine. Ensure they are chilled before serving.

Select Your Wines

Pour each type of wine into a separate glass. Make sure to serve them side by side with the truffles for a delightful tasting experience.

Serve the Wines

Take a truffle, savor its rich flavor, and take a sip of the corresponding wine. Experiment with different combinations to find your favorite pairing.
