Preparation

1. Marinate the Chicken

In a large bowl, combine the Gewürztraminer spice blend, salt, and black pepper. Add the chicken thighs and coat them well with the spice mixture. Cover and let marinate for at least 30 minutes in the refrigerator.

2. Prepare the Vegetables

While the chicken is marinating, chop the onion, mince the garlic, dice the bell pepper, and dice the carrot. Set the vegetables aside.

3. Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic, diced bell pepper, and diced carrot and cook for an additional 5-7 minutes until the vegetables are tender.

4. Cook the Chicken

Push the sautéed vegetables to the side of the skillet and add the marinated chicken thighs. Brown the chicken on both sides, about 4-5 minutes per side. Once browned, pour in the white wine and bring to a simmer.

5. Simmer

Cover the skillet and let it simmer on low heat for about 20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Serving

6. Garnish and Serve

Once cooked, remove the skillet from heat. Garnish the dish with freshly chopped parsley. Serve hot with your choice of sides.
