Select ripe Pinot Noir grapes from the vineyard, ensuring they are free from rot and pests.

Harvesting the Grapes

In a clean, sanitized area, crush the grapes gently to release the juice and pulp. This can be done using a grape crusher or by hand.

Crushing the Grapes

Transfer the crushed grapes (must) into a fermentation vessel, leaving some headspace. Add the packet of wine yeast to the must and stir well to ensure it is evenly distributed.

Initial Fermentation

Cover the fermentation vessel with a clean cloth or airlock and store it in a cool, dark place. Allow fermentation to take place for about 7-14 days, monitoring daily for bubbling activity.

Monitoring Fermentation

After fermentation is complete, strain the liquid from the grape skins and seeds. In a clean container, add in the oak chips, split vanilla bean, and spices to the wine for aging.

Adding Oak and Spices

Seal the container and let the wine age for at least 6 months, tasting periodically to check the flavor development.

Aging the Wine

Once the aging process is complete, carefully siphon the wine into clean, sterilized bottles. If desired, add sulfites for preservation before sealing the bottles.
