House Sauce

Combine mayonnaise, ketchup, Dijon mustard, sweet pickle relish, apple cider vinegar, smoked paprika, garlic powder, salt, and black pepper in a small bowl. Whisk until smooth. Taste and adjust acidity or sweetness (add up to 1/2 tsp more vinegar or 1/2 tsp sugar). Refrigerate while you prepare the rest (can be made up to 24 hours ahead).
Caramelized Onions

Heat a large skillet over medium-low heat. Add butter and olive oil until butter is melted and foaming. Add the thinly sliced onion and spread into an even layer. Season with 1/4 tsp kosher salt and the brown sugar if using. Cook, stirring or scraping the pan every 3–5 minutes, maintaining a gentle sizzle (lower heat if browning too quickly). After about 20–30 minutes the onions will be deeply golden and soft — continue up to 35–40 minutes for deeper caramelization. If they stick lightly, add a tablespoon of water and scrape the fond. Stir in balsamic vinegar in the last minute, cook 30 seconds, remove from heat, and set aside.

Forming and seasoning
Divide the 1 lb of ground Wagyu into 8 equal portions (about 2 oz each) for sliders. Gently form into loose patties slightly wider than the buns — do not overwork the meat; press a small dimple in the center of each patty to prevent doming during cooking. Season both sides lightly with kosher salt and freshly ground black pepper and brush or sprinkle each patty with about 1/8 tsp Worcestershire sauce.

Cooking
Heat a heavy skillet or griddle over medium-high until hot. Add 1 tablespoon neutral oil and swirl. Place patties on the hot surface, leaving space between them. Cook for about 2 minutes without moving to get a good sear. Flip and immediately place a halved slice of American cheese on top of each patty. Cook another 1.5–2 minutes for medium-rare to medium (adjust time if you prefer more done). For fully melted cheese, cover the pan briefly (30–45 seconds) or add a splash of water and cover to steam. Remove patties to a plate and let rest 2 minutes.

Toast the buns
Split the slider buns and brush the cut sides lightly with the 1 tablespoon melted butter. Toast cut-side down in a clean skillet over medium heat until golden, about 1–2 minutes. Remove and keep warm.

Build sliders
Spread about 1 tablespoon of house sauce on each bottom bun. Place a cheese-topped Wagyu patty on the sauce. Top with 1–2 tablespoons caramelized onions and 1–2 pickle slices (or equivalent). Finish with a small smear of sauce on the top bun if desired and close. Repeat for all sliders (yields 8 sliders).

Finish and serve
Arrange sliders on a platter, sprinkle a light grind of black pepper over the top if desired, and serve immediately. Provide extra house sauce and pickles on the side.
