    Activate yeast and combine

    In a small bowl, whisk warm water, sugar, and active dry yeast. Let sit 5–10 minutes until foamy. If mixture does not foam, discard and use new yeast.

    Make dough

    In a large bowl or stand mixer fitted with a dough hook, combine flour and kosher salt. Add yeast mixture and melted butter. Mix on low until a shaggy dough forms, then increase speed and knead 5–7 minutes until smooth and elastic. Dough should be slightly tacky but not sticky; add up to 2 tablespoons more flour if too sticky.

    First rise

    Lightly oil a clean bowl, place dough in it, turning to coat. Cover with plastic wrap or a damp towel and let rise in a warm draft-free place until doubled, about 45–60 minutes.

Shaping & Bath

    Preheat oven

    Preheat oven to 425°F (220°C). Line two baking sheets with parchment paper and set aside.

    Portion dough

    Turn dough onto a lightly floured surface and punch down gently. Divide dough into four equal pieces. Roll each piece into a long rope about 18–20 inches (45–50 cm). Cut ropes into 1-inch (2.5 cm) pieces to form bite-sized pieces.

    Prepare baking soda bath

    In a wide, shallow pot, bring 9 cups water to a rolling simmer and carefully add 3/4 cup baking soda (mixture will bubble). Reduce heat to maintain a gentle simmer.

    Boil pretzel bites

    Working in batches (do not overcrowd), use a slotted spoon to lower 10–12 pretzel bites into the simmering baking soda bath for about 20–30 seconds, turning once. Remove with slotted spoon, drain briefly, and transfer to prepared baking sheet, spacing bites about 1 inch apart.

    Egg wash and salt

    Whisk the large egg with 1 teaspoon cold water to make an egg wash. Brush each pretzel bite lightly with egg wash and sprinkle with coarse sea salt.

    Bake in the preheated 425°F (220°C) oven for 12–15 minutes, until deep golden brown. Rotate pans halfway through baking for even color.

    Brush with butter

    Remove pretzel bites from oven and immediately brush with 2 tablespoons melted butter. Transfer to a wire rack to cool slightly before serving.
