Dressing Preparation

    Mince and combine

    Place the anchovy fillets and smashed garlic cloves on a cutting board. Finely mince them together until they form a paste. Transfer the paste to a medium bowl.

    Add the mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, and fresh lemon juice to the bowl with the anchovy-garlic paste. Whisk until smooth and combined.

    Slowly drizzle in the extra-virgin olive oil while whisking continuously to create a creamy emulsion. Season with kosher salt and freshly ground black pepper. Taste and adjust: add more lemon for brightness, salt for seasoning, or a touch more anchovy for umami. The dressing should be thick but pourable. If too thick, whisk in 1–2 teaspoons of water.

Salad Assembly

    Rinse the romaine lettuce thoroughly under cold water, then spin or pat dry until mostly free of moisture. Chop or tear the leaves into roughly 1–2 inch pieces and place them in a large salad bowl.

    Add about two-thirds of the dressing to the bowl with the romaine. Toss gently but thoroughly with tongs or salad servers so each leaf is lightly coated. Add more dressing if desired, a tablespoon at a time — you want a thin, even coating rather than puddles of dressing.

    Sprinkle the grated Parmesan over the dressed lettuce and fold in the croutons so they stay crisp. If using shaved Parmesan, add it on top as a garnish.
