Balsamic Glaze

    Reduce glaze

    In a small saucepan, combine 3 tablespoons balsamic vinegar and 1 teaspoon brown sugar (or honey). Bring to a gentle simmer over medium-low heat, stirring to dissolve the sugar. Let simmer until reduced by about half and slightly syrupy, 6–8 minutes. Watch carefully so it doesn't burn. Remove from heat and let cool slightly; it will thicken as it cools.

    Prepare bread

    Preheat oven to 400°F (200°C). Slice the baguette diagonally into 12–16 slices, about 1/2-inch thick. Brush one side of each slice lightly with melted butter or olive oil.

    Toast

    Arrange slices on a baking sheet, buttered side up. Toast in the preheated oven until golden and crisp, 6–8 minutes, flipping once if desired for even color. If using a broiler, watch carefully and broil 1–2 minutes per side. Optional: rub the warm toast with the cut garlic clove for a hint of garlic.

    Prepare tomatoes

    While glaze reduces and toast bakes, wash and dry the tomatoes. Slice each tomato into 1/4-inch rounds (about 8–10 slices per medium tomato) or into wedges if preferred. Lay the slices/wedges on a serving platter in an overlapping pattern or in small stacks.

    Dress tomatoes

    Drizzle the tomato slices lightly with 1 1/2 tablespoons extra-virgin olive oil, and season evenly with 1/2 teaspoon sea salt and 1/2 teaspoon freshly ground black pepper. Gently toss or press the tomatoes so the oil and seasoning coat them.

    Add burrata

    Place the burrata balls in the center of the platter or divide between two plates. If burrata is large, tear each ball open slightly so the creamy interior is exposed and can mingle with the tomatoes.

    Finish and garnish

    Scatter fresh basil leaves over the tomatoes and around the burrata. Drizzle remaining 1 1/2 tablespoons olive oil over the burrata and tomatoes. Spoon the cooled balsamic glaze in a thin ribbon over the arrangement (use more or less to taste). Finish with the remaining 1/2 teaspoon sea salt and 1/2 teaspoon black pepper if desired.

    Serve

    Serve immediately with the toast points on the side so guests can spoon some burrata and tomatoes onto each toast. Leftovers: store burrata and dressed tomatoes separately from toast and glaze in the refrigerator and consume within 24 hours.
