    Prepare glass

    Rub the rim of a highball or Collins glass with the lime wedge. Lightly dip the rim into the fine sea salt spread on a small plate to create a thin salt rim. Set the glass aside.

    Combine ingredients

    In a cocktail shaker, add the tequila, fresh blood orange juice, fresh lime juice, and agave syrup. Add a handful of ice (about 4-6 large cubes) to the shaker.

    Shake

    Secure the shaker and shake vigorously for 10-12 seconds until the exterior is chilled and slightly frosty. This chills and dilutes the mixture slightly for balance.

    Strain and build

    Fill the prepared glass with fresh ice (crushed or cubes, about 1 cup). Strain the shaken mixture over the ice. Top with the chilled grapefruit soda (about 3 oz) and stir gently once or twice with a bar spoon to combine without flattening the soda.

    Taste and adjust

    Taste the Paloma and, if needed, add up to 0.25 oz more agave syrup for sweetness or a squeeze of lime for more acidity. Stir gently to incorporate any adjustments.
