Prepare and preheat

In a medium bowl, whisk together the all-purpose flour, baking powder, and sea salt until evenly combined. Set aside.

In a large mixing bowl, use an electric mixer to beat the granulated sugar and large eggs on medium-high speed for about 3–4 minutes, until the mixture is pale, slightly thickened, and ribbon-like when the beaters are lifted. Reduce speed to low and add the vegetable oil, whole milk, vanilla extract, and yuzu zest; mix just until combined.

Fold the dry ingredients into the wet mixture in two additions using a rubber spatula, mixing gently until just incorporated. Do not overmix; small lumps are fine.

Prepare soaking mixture
While the cake cools slightly, whisk together the sweetened condensed milk, evaporated milk, whole milk (or half-and-half), fresh yuzu juice, and the optional tablespoon of granulated sugar until smooth and homogenized. Taste and adjust: the yuzu should be bright but not overpower the sweetness—add up to 1–2 tsp more yuzu juice if you prefer more tang, or reduce sugar if too sweet.

Pierce the cake
While the cake is still warm but not hot, use a skewer, fork, or the handle of a wooden spoon to poke holes evenly across the surface, about 1 inch (2.5 cm) apart, going almost through to the bottom. This ensures the milk mixture soaks evenly.

Pour the tres leches
Slowly pour the yuzu-tres-leches mixture over the pierced cake in three even streams, allowing the liquid to sink in between pours. Pour around the edges first so the edges absorb as well. Cover the pan with plastic wrap and refrigerate for at least 4 hours, preferably overnight, so the cake fully soaks and becomes custardy.

Before whipping, chill the mixing bowl and beaters in the refrigerator for 10–15 minutes for best results.

Pour the heavy cream into the chilled bowl, add powdered sugar and vanilla extract. Beat on medium-high speed until soft peaks form, about 2–3 minutes. Taste and fold in the additional 1 teaspoon yuzu zest gently for aroma (reserve a little zest for garnish). Do not overbeat; stop when peaks are stable but still glossy.

Spread the whipped cream evenly over the chilled, soaked cake using a spatula. Refrigerate for at least 30 minutes to let the topping set slightly before serving.
Garnish and Serve

Just before serving, garnish the top with thin yuzu slices or segments, sprinkle the reserved yuzu zest, and scatter micro mint leaves or grated white chocolate as desired for a contrast in texture and color.
