Cheeses

Method

Cheeses

  1. 1

    Bring cheeses to room temperature

Remove all cheeses from refrigeration 30–60 minutes before serving (depending on ambient temperature). This allows flavors and textures to open up—soft cheeses should be slightly yielding and firm cheeses should lose chill and become more fragrant.

  2. 2

    Prepare Brie

Place the whole wheel of Brie on a cutting board. Using a sharp knife, score the top rind in a shallow crisscross if you want a prettier presentation. Optionally drizzle 1 tsp olive oil and a few cracks of black pepper on top just before serving.

  3. 3

    Cut firm cheeses

Slice the aged cheddar and Manchego into a mix of bite-size cubes and 3–4 mm slices or triangles. Arrange slices in small overlapping rows on the platter to make them easy to pick up with fingers or a small fork.

  4. 4

    Portion blue cheese

Crumble or cut the blue cheese into small wedges. Place it in a small separate dish or on the board with a small cheese knife to contain its stronger aroma and make serving neater.

Preserves & Accompaniments

  1. 5

    Present jams and honey

Spoon the fig jam into a small serving bowl or ramekin. Pour the honey into a separate small dish or a jar with a small spoon. Place both near soft cheeses (Brie and blue cheese pair very well) for easy access.

  2. 6

    Prepare mustard and pickles

Spoon whole grain mustard into a small dish. Arrange cornichons/pickles beside it so guests can pair them with the cheeses to cut richness.

  3. 7

    Arrange fruit and dried fruits

Wash and pat dry the grapes, then separate into small clusters or single grapes for easy picking. Halve dried apricots or dates if large and place them near the nuts and preserves.

  4. 8

    Toast or prepare nuts

If almonds or walnuts are raw, toast them briefly in a dry skillet over medium heat for 3–4 minutes until fragrant, shaking frequently to avoid burning. Let cool, then place in a small pile on the board.

Crackers & Bread

  1. 9

    Prepare baguette

Preheat oven to 180°C (350°F). Thinly slice the baguette, brush lightly with olive oil if desired, and toast on a baking sheet for 6–8 minutes until just crisp and lightly golden. Let cool slightly before serving.

  2. 10

    Arrange crackers

Fan the assorted crackers in one or two stacks on the board. Keep them separate from moist components (jams, honey) to avoid sogginess.

Assembly & Presentation

  1. 11

    Choose and prepare serving board

Select a large wooden board or platter. Wipe it dry and, if desired, rub lightly with a halved garlic clove for a subtle aroma (optional).

  2. 12

    Place cheeses first

Position the cheeses across the board with different textures spaced apart: place the Brie wheel, a wedge of blue cheese in a small dish, and neatly arranged slices of cheddar and Manchego. Aim for visual balance and accessibility from all sides.

  3. 13

    Add bowls of condiments

Place the ramekins of fig jam, honey, and mustard near cheeses that pair best with them (e.g., jam by Manchego, honey by blue cheese or Brie).

  4. 14

Fill with fruits, nuts and pickles

Tuck grape clusters, dried fruits, cornichons, and nuts in the gaps around the cheeses and condiments to create visual variety and make everything reachable without crowding.

  5. 15

    Add crackers and bread

Lean crackers and baguette slices along one or two sides of the board so guests can access them easily without reaching over cheeses.

  6. 16

    Garnish and final touches

Scatter a few fresh herb sprigs (rosemary or thyme) for color, sprinkle the walnuts if using, and add a few extra cracked black pepper flakes over the Brie if you opted to oil it. Provide separate cheese knives or spreaders for each cheese to avoid flavor mixing.

  7. 17

    Serving notes

Bring the board to the table with small plates and toothpicks or spreaders. Recommend guests start with the mildest cheese and progress to stronger flavors (Manchego/cheddar → Brie → Blue). Refill preserves and crackers as needed.
