Steak & Marinade
Add the seasoned steak in an even layer. Let it sear undisturbed 30–45 seconds to develop color, then use a spatula to flip and sear the other side 30–45 seconds. Work quickly to avoid overcooking; you want tender strips with browned edges.
Onions & Bacon
In a medium skillet, heat 1 tbs butter and 1 tsp vegetable oil (or reserved bacon fat) over medium-low heat. Add the thinly sliced onions, a pinch of salt and pepper, and cook slowly, stirring every few minutes, until soft and deeply golden brown — about 12–15 minutes. If onions brown too quickly, reduce heat. Remove from heat and keep warm.
Bread & Cheese Assembly
Return the pan with the seared steak to medium-high heat. Spread the steak into an even layer and place the American cheese slices directly on top of the hot meat. If you want the cheese extra melty, cover the pan briefly (30–45 seconds) or place a metal bowl over the meat to trap steam and melt the cheese.
Close the sandwich, slice in half if desired, and serve immediately while hot.
