Prepare oil and fries
If deep-frying: pour oil into a deep fryer or large heavy pot to a depth of 2–3 inches (about 1 cup for a medium pot). Heat oil to 350°F (175°C). If baking: preheat oven to 425°F (220°C) and line a large baking sheet with parchment or a lightly oiled wire rack.
Single layer and spacing
Remove fries from the freezer and keep them frozen until cooking. Do not thaw. For best crunch, work in a single layer: for frying, cook in 1/3–1/2 lb batches to avoid overcrowding; for baking, spread fries in a single layer with small gaps so hot air circulates.
Frying (preferred for crunch)
Carefully add a batch of frozen fries to the hot oil using a spider or slotted spoon. Fry for 3–4 minutes until the exterior is lightly golden and the interior heated through. For extra crunch, remove briefly when lightly golden, let oil return to temperature, then fry a second time for 1–2 minutes until deep golden-brown and crisp. Transfer to a tray lined with paper towels to drain.
Baking (oven method)
Toss the frozen fries lightly with a tablespoon of oil (if desired) to encourage browning. Spread in a single layer on the prepared sheet. Bake for 15 minutes, flip fries or shake the pan, then bake another 10–12 minutes until edges are crisp and golden. For extra crispness, broil 1–2 minutes at the end while watching closely.
Seasoning
Immediately after cooking while fries are hot, transfer fries to a large bowl or tray and sprinkle with sea salt, black pepper, paprika, and garlic powder (if using). Toss gently to distribute seasoning evenly so every fry is seasoned.
