Prepare simple syrup (if not using ready-made)

Combine 1 cup granulated sugar and 1/2 cup water in a small saucepan (2:1 ratio by volume). Heat over medium until sugar dissolves completely. Remove from heat and cool to room temperature. Refrigerate until chilled.

Chill the carbonated water thoroughly before mixing. Use well-carbonated bottled or kegged water for best fizz; avoid flat water.

Measure the flavor: add 1/4 teaspoon of your chosen soda flavor concentrate to a clean measuring spoon or small mixing cup.

Add the simple syrup: pour 3/4 ounce (about 15–20 ml) of the chilled simple syrup into a 12 fl oz can or a clean bottle or glass. This amount yields a moderately sweet soda (approximate 7–9% sugar by weight in final liquid); adjust to taste.

Add the acid: add 1/4 teaspoon citric acid solution or 1/4 teaspoon freshly squeezed lemon juice to provide brightness and balance the sweetness.

Add color and extras: if making a cola, stir in 1/4 teaspoon caramel color and, if desired, a pinch (about 0.02 tsp) of food-grade caffeine powder and 0.05 tsp sodium benzoate solution for preservation. These are optional — omit if not desired.

Combine gently: slowly pour 12 fl oz of chilled carbonated water into the container with flavor and syrup. Pour over the back of a spoon or down the side to minimize CO2 loss and preserve carbonation.

Stir very gently with a long spoon 2–3 slow strokes to incorporate flavor without flattening the soda.

Taste and adjust: taste a small sip. If you want it sweeter, add up to another 0.25 oz (7 ml) simple syrup. If it needs more brightness, add a few drops more citric acid solution or a squeeze of citrus (no more than 1/8 tsp).

If preparing in advance for canning or bottling, follow proper commercial or home-bottling sanitation and pressure-handling procedures; chill and bottle in PET or pressure-rated bottles. For a single canned-serving style experience, serve immediately over ice or chill in the refrigerator before serving.
