Method
Cocktail
Build and shake
Chill a coupe or Nick & Nora glass by filling with ice or placing in the freezer. In a cocktail shaker, add fresh lime juice, simple syrup, and orange curaçao first. Pour in the 2 oz light Puerto Rican rum, then add 2 dashes of Angostura bitters. Fill the shaker with ice (about 1 cup) and shake vigorously for 12–15 seconds until well chilled and slightly diluted.
Strain and float
Discard ice from the chilled serving glass. Double-strain the shaken cocktail into the glass using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and any pulp. Gently pour (float) the 0.25 oz gold/aged rum over the back of a bar spoon so it rests on top of the cocktail.
Garnish and serve
Express a lime wheel or twist over the top to release oils, then drop it onto the surface or rim the glass with it. Serve immediately.
