Prepare the Vegetables

In a skillet, heat olive oil over medium heat. Add sliced bell peppers and onions, sauté until they are soft and slightly caramelized, about 5-7 minutes. Season with salt and black pepper to taste.

Assemble the Sandwich

On one slice of sourdough, spread a layer of spicy mustard. Layer the sliced turkey, sautéed peppers and onions, banana peppers, and top with pepper jack cheese. Place another slice of sourdough on top.

Grill the Sandwich

Heat a grill pan or skillet over medium heat. Brush the outside of the sandwich with a bit of olive oil. Grill the sandwich for about 3-4 minutes on each side, or until the bread is golden brown and the cheese has melted.

Serve

Remove from heat, let it cool for a minute, then slice in half and serve warm.
