In a large brew kettle, heat 5 gallons of water to about 165°F (74°C).

Prepare the Mash

Once the water is heated, add the Pale Malt, Caramel Malt, Munich Malt, and Chocolate Malt to the kettle. Stir well to ensure all grains are saturated.

Add Grains

Maintain the mash temperature at around 150°F (65°C) for 60 minutes. Stir occasionally.

Mash Rest

After the mash rest, sparge the grains with hot water to collect wort. Aim to collect at least 6 gallons of wort.

Sparging

Bring the collected wort to a rolling boil.

Bring to Boil

Once boiling, add the Hallertau hops and boil for 60 minutes.

In the last 15 minutes of the boil, add the Tettnanger hops.

Add the candy sugar during the last 5 minutes of the boil, stirring to dissolve.

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Transfer the cooled wort to a sanitized fermenter.

Sprinkle the Belgian yeast on top of the wort in the fermenter.

Pitch Yeast

Seal the fermenter and allow it to ferment in a dark, cool place at about 68°F (20°C) for 1-2 weeks, until fermentation is complete.

Sanitize your bottles and caps before bottling.

Prepare Bottles

Siphon the beer into the bottles, leaving about an inch of space at the top.

Bottle the Beer

Cap the bottles securely and store them in a dark, cool place for carbonation.

Allow the beer to condition for at least 2 weeks before enjoying.
