Prepare the Skirt Steak

Season the skirt steak on both sides with salt and black pepper.

Cook the Steak

Heat olive oil in a skillet over medium-high heat. Add the skirt steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for 5 minutes before slicing.

Frites

Prepare the Potatoes

Peel and cut the potatoes into thin strips to make frites. Rinse them in cold water to remove excess starch, then pat dry with a paper towel.

Fry the Potatoes

In a deep pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Fry the potato strips in batches until golden and crispy, about 4-5 minutes. Remove from oil and drain on paper towels. Season with salt while hot.

Cognac-Green Peppercorn Sauce

Make the Sauce

In the same skillet used for the steak, add the chopped shallot and sauté until translucent. Add the cognac and let it reduce by half. Stir in the green peppercorns and heavy cream, then simmer until the sauce thickens. Finish with butter, and season with salt and black pepper to taste.

Garlic Aioli

Prepare the Aioli

In a bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix well until all ingredients are incorporated. Adjust seasoning to taste.
