Begin by harvesting 10 kg of fully ripe Tempranillo grapes in the early morning to ensure maximum freshness.

Harvesting

Once harvested, crush and destem the grapes to release the juice. This can be done manually or using a grape crusher.

Crushing and Destemming

Add 50g of sulfur dioxide to the crushed grapes to prevent oxidation and spoilage. Mix thoroughly.

Adding Sulfur Dioxide

Add 20g of yeast to the must (crushed grapes) and allow it to ferment in a temperature-controlled environment for about 7-14 days, monitoring the temperature to keep it between 20-25°C.

Fermentation

Once primary fermentation is complete, add 5g of malolactic bacteria to the wine to soften acidity and add complexity. Allow this fermentation to occur for about 2-4 weeks.

Malolactic Fermentation

Transfer the wine into oak barrels for aging. Allow the wine to mature for at least 12 months to develop depth and complexity.

Aging

After aging, filter the wine and bottle it. Ensure the bottles are sealed properly to maintain the freshness and elegance of the wine.
