In a medium bowl whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly combined and aerated.

Combine wet ingredients

In a separate bowl whisk the large egg until slightly frothy. Add the whole milk, melted butter, and vanilla extract and whisk until smooth and uniform.

Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined — small lumps are fine. Do not overmix; overworking the batter leads to dense flappers. Let the batter rest for 5–10 minutes at room temperature to allow the baking powder to activate and the flour to hydrate.

Heat a large nonstick skillet or griddle over medium-low to medium heat. Lightly grease the surface with a little of the unsalted butter or neutral oil, wiping away excess with a paper towel so the surface is thinly coated.

For silver-dollar-size pancakes, use a spoon or small 1.5–2-tablespoon cookie scoop to drop batter onto the hot griddle. Maintain roughly 2–3 inches between each flapper. Cook in batches if needed so you don’t crowd the pan.

Cook the flappers until small bubbles form across the surface and the edges look set, about 1.5–2 minutes. Carefully flip with a thin spatula and cook the second side until golden brown, another 45–90 seconds. Adjust heat as necessary — if they brown too quickly, lower the heat; if they take too long, raise it slightly.

Transfer cooked flappers to a warm plate or an oven set to low (around 200°F / 95°C) while you cook remaining batter. Lightly grease the pan again before each new batch if the surface becomes dry.

Stack flappers in piles of 6–8 per serving. Top with a drizzle of maple syrup (about 2 tbsp per serving), a scattering of fresh berries or sliced fruit, and a dusting of powdered sugar if using.

Serve immediately while warm. Leftover flappers can be cooled completely, stored in an airtight container in the refrigerator for up to 3 days, and gently reheated in a skillet or toaster before serving.
