Preparation
Prepare the Cauliflower
Preheat your oven to 450°F (230°C). Remove the leaves and stem from the cauliflower, then cut it into bite-sized florets.
Make the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, garlic powder, paprika, salt, and water. Whisk until smooth and without lumps.
Coat the Cauliflower
Dip each cauliflower floret into the batter, allowing any excess to drip off. Place the coated florets on a baking sheet lined with parchment paper.
Baking
Bake the Wings
Drizzle olive oil over the coated cauliflower wings and bake in the preheated oven for 20-25 minutes, or until golden and crispy. Flip halfway through for even cooking.
Saucing
Toss with Buffalo Sauce
Once the cauliflower wings are crispy, remove them from the oven and transfer them to a large bowl. Pour the buffalo sauce over the wings and toss to coat evenly.

Serve
Serve the cauliflower wings hot, with optional celery sticks and ranch or blue cheese dressing on the side.
