Place all bottles in a refrigerator for at least 3 hours, or into an ice bucket filled with equal parts water and ice for 20–30 minutes until chilled to about 45°F (7°C). If you prefer extra cold, chill briefly to 40°F (4°C) but avoid overchilling, which mutes aromas.

Confirm each bottle’s label and vintage so you can introduce them correctly to guests: Mercat Sparkling Rosé (Spain), Gloria Ferrer Blanc de Blancs, Sparkling Brut (Carneros), and Taittinger La Française Brut (Champagne).

Inspect labels & vintage

Keep a towel over the cork, hold the bottle at a 45° angle away from people and fragile items, grasp the cork firmly and twist the bottle (not the cork) slowly until the cork eases out with a gentle pop. For smaller gatherings, open just before pouring to preserve bubbles.

Open bottles safely

Pour by tilting the glass at about 45° and gently pouring down the side until the glass is about two-thirds full, then straighten and top off. This preserves effervescence and concentrates aromas. For Blanc de Blancs and Champagne, pour a slightly smaller pour (about 4–5 oz / 120–150 ml) to allow swirling and nosing.

Pouring technique

Inspect and rinse glasses in warm water just before use; dry with a lint-free cloth. If glasses have film or residue, rinse with a splash of bottle water and dry. Arrange 6 flutes or sparkling glasses on a clean surface, spaced for easy pouring.

Prepare glassware

Fill the ice bucket with crushed ice (about 6 cups) and a little water to create contact cooling. For service, nestle the bottles in the ice bucket so the necks are visible and accessible.

Place a small carafe of still water and light snacks (unsalted nuts, plain crackers, mild cheeses) nearby. Encourage guests to sip water between tastings to reset the palate. Serve snacks on small plates or a shared board, replenishing as needed.

Provide palate cleansers and snacks

Serve in order from lightest to richest and driest to fullest: start with Mercat Sparkling Rosé (lighter, fruit-forward), then Gloria Ferrer Blanc de Blancs (zesty, Chardonnay-driven), followed by the Sparkling Brut (Carneros — richer, possibly with some oak influence), and finish with Taittinger La Française Brut Champagne (complex, fine mousse).

Tasting order

As you serve, give a 1–2 sentence note on each bottle: origin, grape or style highlights (e.g., 'Blanc de Blancs = 100% Chardonnay, bright citrus and green apple'), tasting cues (aroma, acidity, finish) and any suggested pairings. This helps guests appreciate differences.

Describe each pour briefly

If bottles remain, reseal with a sparkling wine stopper and store upright in the refrigerator. Consume opened sparkling within 1–3 days for best effervescence; Blanc de Blancs and Champagne may retain bubbles slightly longer with a good stopper.
