Portion granola

Divide 2 cups of locally sourced granola into four equal portions (~1/2 cup each). Keep covered in an airtight container or bowl until assembly to maintain crunch.

Toasted Coconut Yogurt

Toast shredded coconut

Heat a small skillet over medium heat. Add 3 tablespoons shredded coconut and toast, stirring constantly, until golden and fragrant, about 2–3 minutes. Transfer immediately to a plate to stop cooking.

Flavor yogurt

In a medium bowl, whisk together 3 cups Greek yogurt, 1 teaspoon vanilla extract and 1 tablespoon maple syrup or honey (optional) until smooth. Gently fold in the toasted shredded coconut, reserving a pinch for garnish. Taste and adjust sweetness if desired.

Prepare berries

Rinse all berries under cold water and drain in a colander. Hull and quarter strawberries into bite-sized pieces. Leave blueberries and raspberries whole. Gently pat dry with paper towel to remove excess moisture to avoid soggy parfaits.

Light maceration (optional)

If you prefer slightly sweeter, softer berries: toss the berries with 1 teaspoon of desert honey and a pinch of lemon zest; let sit 5–10 minutes. Drain any excess juice before assembling.

Finishing & Garnish

To assemble four parfaits: choose 8 (6–8 oz) glasses or jars. Start with about 2 tablespoons of granola in the bottom of each glass to create a crunchy base.

Spoon about 3/8 cup (roughly 6 tablespoons) of the toasted coconut yogurt over the granola layer in each glass, smoothing slightly.

Add a layer of mixed berries: distribute the prepared strawberries, blueberries, and raspberries evenly among the four glasses (about 3/8 cup total berries per glass).

Repeat: add another 2 tablespoons granola to each, then another ~6 tablespoons yogurt to create two visible layers (or continue to taste/height of glass).

Top each parfait with a final sprinkle of granola, a few whole berries, the reserved toasted coconut, and a drizzle of 1 teaspoon desert honey per parfait.

Garnish with 2 fresh mint leaves and a light dusting of lemon zest on each parfait if using. Serve immediately so granola stays crisp. If making ahead, assemble without the top granola and honey; add those just before serving.
