Fermentation

After fermentation, transfer the wine to another vessel, leaving the sediment behind. This process is called racking.

Racking

Age the wine for 2-6 months in stainless steel tanks to develop its flavors. Monitor the acidity and adjust with sulfur dioxide if necessary.

Aging

Once aging is complete, filter the wine to remove any remaining solids and bottle it. Seal the bottles and store them in a cool, dark place.
