Harvesting and Preparing the Grapes

Begin by harvesting ripe Assyrtiko grapes. Remove any stems and leaves, and wash the grapes thoroughly to ensure they are clean.

Crushing the Grapes

Place the cleaned grapes in a fermentation vessel and crush them to release the juice. You can use a grape crusher or do this manually with clean hands.

Adding Ingredients

Add the filtered water and granulated sugar to the crushed grapes. Stir well to dissolve the sugar completely.

Yeast Addition

Sprinkle the wine yeast over the mixture and stir gently. Allow it to sit for about 15 minutes to activate the yeast.

Fermentation Process

Cover the fermentation vessel with a clean cloth or airlock and let it ferment in a cool, dark place for 10-14 days, stirring daily.

Racking the Wine

After fermentation is complete, siphon the wine into a new clean vessel, leaving the sediment behind. If desired, add oak chips for flavor.

Aging

Seal the vessel and let the wine age for at least 3-6 months in a cool, dark place. The longer it ages, the better the flavor.

Once aged, siphon the wine into clean bottles, seal them, and label them. Store in a cool, dark place until ready to enjoy.
