Select ripe Tempranillo and Garnacha grapes from the vineyard. Hand-pick the grapes to ensure quality.

Harvesting the Grapes

Crush the grapes gently to extract the juice. Press the crushed grapes to separate the juice from the skins.

Add yeast to the grape juice and allow it to ferment in temperature-controlled tanks for about 15-20 days.

Fermentation

Riddling

Freeze the neck of the bottle to trap the sediment, then remove the sediment plug and quickly seal the bottle.

Disgorging

Cork the bottles and label them for distribution.
