Marinate the Chicken
In a large bowl, combine the buttermilk, salt, black pepper, paprika, garlic powder, and onion powder. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Coating
In a separate bowl, mix together the all-purpose flour and cornstarch. Remove the chicken from the marinade and let excess liquid drip off. Dredge each piece in the flour mixture, shaking off any excess.

Fry the Chicken
Heat oil in a large skillet or deep fryer to 350°F (175°C). Fry the chicken pieces in batches for about 8-10 minutes per side, or until golden brown and cooked through. Drain on paper towels and keep warm.

Make the Waffles
Preheat a waffle iron according to manufacturer instructions. In a bowl, combine 2 cups of all-purpose flour, 2 tsp baking powder, 1/2 tsp salt, 2 tbsp sugar, 2 eggs, 1 3/4 cups milk, and 1/2 cup melted butter. Mix until just combined. Pour the batter into the preheated waffle iron and cook until golden brown.

Place a waffle on a plate, top with a piece of fried chicken, and drizzle with maple syrup. Serve immediately.
