Prepare the Onions

Heat olive oil in a skillet over medium heat. Slice the onions thinly and add them to the skillet. Cook slowly, stirring occasionally, until the onions are caramelized and golden brown, about 20-25 minutes.

Cook the Beef

In a separate pan, season the Angus beef with salt and pepper. Cook over medium-high heat for about 3-4 minutes on each side for medium-rare, or until desired doneness. Remove from the heat and let rest for a few minutes.

Deglaze with Sherry

Once the onions are caramelized, add the sherry and thyme to the skillet, scraping up any brown bits from the bottom. Cook for an additional 5 minutes until the liquid reduces slightly.

Assemble the Dish

Slice the cooked Angus beef and layer it on top of the caramelized onions in the skillet. Sprinkle gruyere cheese over the top and cover the skillet until the cheese melts.

Serve

Serve the beef and onion mixture hot with frites on the side.
