Method
Prep
Prepare the greens and vegetables
Wash all greens thoroughly in several changes of cold water to remove grit. Remove tough stems from collards and kale; stack leaves, roll them tightly, and slice into 1/2-inch ribbons for collards and kale. Roughly chop the spinach if leaves are large. Dice the onion, peel and grate the carrot, mince the garlic, and slice the scallions (white and green parts separated).
Sauté Base
Heat a large heavy-bottomed pot over medium heat. Add olive oil and, when shimmering, add diced onion and the white parts of the scallions. Sauté until the onions are translucent, about 5–6 minutes.
Simmer
Pour in the vegetable broth and water, scraping any browned bits from the bottom of the pot. Add the bay leaf, smoked paprika, crushed red pepper flakes, soy sauce, apple cider vinegar, black pepper, and salt. Bring the liquid to a gentle simmer.
Carefully add the tougher greens first (collards and kale). Push them down into the broth — they will wilt quickly and reduce in volume. Cover the pot and simmer gently for 20 minutes to allow flavors to meld and for collards to soften. If using a meat hock or turkey leg, partially submerge it in the broth to reheat and release flavor while simmering.
After 20 minutes, add the spinach and the green parts of the scallions. Continue simmering, uncovered, for another 5–7 minutes until all greens are tender but still brightly colored. Taste and adjust seasoning: add more salt, pepper, or a splash more vinegar if you want brighter acidity.
Finish and Serve
Remove the bay leaf. If you used a smoked turkey leg or ham hock, remove it, shred the meat, and return the shredded pieces to the pot. For a smoother texture, you can use an immersion blender to pulse a portion of the pot of greens (optional) to thicken the broth slightly — pulse 1–2 times so the dish keeps body and some whole leaves.
