Prepare dry ingredients
In a large mixing bowl whisk together the yellow cornmeal, all-purpose flour, sugar, baking powder, baking soda, corn grits (if using), and salt until well combined and uniform in color.
Add aromatics
Stir the finely diced yellow onion and chopped scallion into the dry mixture so the pieces are evenly distributed.
Combine wet ingredients
In a separate small bowl beat the egg lightly with the buttermilk, hot sauce (if using), and black pepper.
Make the batter
Pour the wet ingredients into the dry and stir gently just until combined. The batter should be thick but spoonable — similar to a thick muffin batter. Do not overmix; small lumps are fine. If too thick, add 1–2 tablespoons buttermilk; if too loose, add 1–2 tablespoons flour or cornmeal.
For Frying
Heat the oil
Pour oil into a heavy-bottomed pot or deep-fryer to a depth of about 2 to 2.5 inches (roughly 3–4 cups depending on vessel). Heat the oil over medium-high until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small pinch of batter into the oil — it should sizzle immediately and rise to the surface within a few seconds, browning slowly.
Portion the batter
Use a small cookie scoop (about 1.5 tablespoon) or two teaspoons to portion batter. Wet the scoop or spoons lightly to prevent sticking. Work in small batches to avoid crowding — 6 to 8 hushpuppies at a time depending on pot size.
Fry until golden
Carefully lower scoops of batter into the hot oil. Fry, turning occasionally, until golden brown and cooked through, 2.5–4 minutes per batch depending on size. Internal texture should be moist but not raw; adjust time slightly for larger or smaller portions.
Keep warm (optional)
If frying multiple batches, keep finished hushpuppies warm in a single layer on a baking sheet in a 200°F (95°C) oven while you finish frying remaining batter.
