Prepare aromatics and mix

Finely chop the dill pickles, capers and parsley so they are small and evenly sized (about 3 tablespoons pickles, 1 tablespoon capers, 2 tablespoons parsley). Mince the shallot (about 1 tablespoon). Zest the lemon and squeeze 1 tablespoon of fresh lemon juice, removing any seeds.

Combine base ingredients

In a medium bowl combine 1 cup mayonnaise, 1 tablespoon Dijon mustard, and 1 teaspoon granulated sugar. Whisk until smooth and uniform in texture.

Fold in flavorings

Add the chopped pickles, chopped capers, minced shallot, chopped parsley, lemon zest and lemon juice to the mayonnaise mixture. Stir gently until everything is evenly distributed.

Season

Add 1 teaspoon Kosher salt and 1 teaspoon freshly ground black pepper. If you want a touch of heat, add 1 teaspoon hot sauce. Taste and adjust seasoning: add up to 1/2 teaspoon more salt or a little more lemon juice if you want brighter acidity.

Rest to meld flavors

Cover the bowl and refrigerate for at least 30 minutes (ideally 1–2 hours) to allow flavors to meld. The sauce can be made up to 48 hours in advance; stir before serving.

Serve and store

Serve chilled alongside fried seafood, sandwiches, or vegetables. Store in an airtight container in the refrigerator for up to 5 days. Discard if it develops off odors or separates.
