Select and hand-pick ripe Cabernet Sauvignon grapes from the vineyard in Napa Valley. Ensure that the grapes are free from rot and disease.

Harvesting Grapes

Place the harvested grapes into a crusher-destemmer machine. Crush the grapes to release the juice while separating the stems from the fruit.

Crushing and Destemming

Transfer the crushed grapes to a fermentation vessel. Add the yeast to the grape juice and mix gently. Allow the mixture to ferment at a controlled temperature (around 25-30°C) for 7-14 days, stirring daily.

Fermentation

After fermentation, press the mixture using a wine press to extract the juice from the skins. Collect the free-run juice and the first press juice in a clean container.

Pressing

Add sulfur dioxide to the collected juice to prevent oxidation and spoilage. Ensure the concentration does not exceed 50 mg/L.

Sulfur Dioxide Addition

Transfer the juice to oak barrels or containers with oak chips. Allow the wine to age for at least 12 months in a cool, dark place. Monitor the flavor development periodically.

Aging

Once the aging process is complete, filter the wine to remove any solids. Bottle the wine in clean, sterilized bottles and seal with corks.

Bottling

Allow the bottled wine to rest for a few weeks before tasting. Serve the Cabernet Sauvignon at room temperature to fully appreciate its complex flavors.
