Taco Preparation
Prepare the Grouper
Preheat your grill or stovetop pan over medium-high heat. Brush the grouper fillets with olive oil and sprinkle with taco seasoning. Grill the fillets for about 4-5 minutes on each side, or until cooked through and flaky. Remove from heat and let rest for a few minutes before flaking into bite-sized pieces.
Make the Slaw
In a large bowl, combine the shredded cabbage, shredded carrots, chopped cilantro, lime juice, and salt. Toss well to combine and set aside to let the flavors meld.
Assemble the Tacos
Place a portion of the flaked grouper onto each warm tortilla. Top with a generous amount of the COAST AL slaw, and drizzle with tartar sauce and pickle relish to taste.
Serve
Serve the tacos with house fries, pasta salad, or a fruit medley on the side.
