Warm Flourless Chocolate Waffle
Melt chocolate and butter
Chop the chocolate into small, even pieces. Combine chocolate and 4 tablespoons unsalted butter in a heatproof bowl and melt together over a gentle simmering water bath (double boiler), stirring until smooth, about 3–5 minutes. Alternatively microwave in 20–25 second bursts, stirring between each burst, until fully melted and glossy. Remove from heat and let cool slightly (2–3 minutes).
Whisk eggs and sugar
In a separate medium bowl, whisk the 4 large eggs with 1 cup granulated sugar until pale and slightly thickened, about 2–3 minutes by hand or 1–2 minutes with an electric mixer on medium speed. The mixture should ribbon slightly when lifted.
Add flavor and cocoa
Sift in 2 tablespoons unsweetened cocoa powder and add 1 teaspoon instant espresso powder (if using) and a pinch of fine salt. Stir in 1 teaspoon vanilla extract. Mix until smooth and fully combined. The batter will be thick and glossy.
Cook the waffle
Once the waffle iron is hot, place enough batter in the center to just cover the waffle grid (about 1/2 to 3/4 cup depending on your iron). Close the lid and cook until the waffle is set and the exterior has a thin crust—usually 3–5 minutes. Check after 3 minutes; cooking time depends on your iron and desired exterior crispness. The interior should be warm and fudgy like a molten cake rather than cakey.
Remove and rest briefly
Carefully remove the waffle with a silicone or wooden spatula and transfer to a plate. Let rest 30–60 seconds so the interior stays warm but not overly runny.
To Serve
Place one warm flourless chocolate waffle on each serving plate. Top each with one scoop of vanilla ice cream (about 1 scoop per waffle). If desired, drizzle 1/2 tablespoon chocolate sauce over the ice cream and waffle, dust with a little confectioners' sugar for contrast, and garnish with fresh berries or a sprig of mint.
Serve immediately while the waffle is warm and the ice cream begins to melt slightly into the center for a warm-and-cold contrast. Repeat cooking remaining batter for additional servings.
