Prepare glass (optional toasted coconut rim)

If using toasted coconut flakes on the rim, rub a lime wedge around the rim of a highball or Collins glass, then dip the rim into a shallow plate of toasted coconut flakes. Set the glass aside.

Muddle mint and sweetener

Place 8 fresh mint leaves in a cocktail shaker or mixing glass. Add 0.75 oz simple syrup and 1 oz fresh lime juice. Gently muddle the mint just enough to release aromatic oils — about 6–8 light presses. Do not over-muddle (which can make the mint bitter).

Add spirits

Add 2 oz white rum and 1 oz Malibu coconut rum to the shaker with the muddled mint mixture. Fill the shaker halfway with crushed ice.

Shake and strain

Briefly (6–8 seconds) shake the mixture to chill and integrate flavors. Strain the contents into the prepared glass filled halfway with fresh crushed ice, leaving some space for soda.

Top with club soda

Carefully top the drink with 2 oz club soda (about a splash to 2 oz depending on glass size) to give a light effervescence. Gently stir once or twice with a bar spoon to combine while preserving carbonation.

Garnish and finish

Garnish with the remaining 2 fresh mint leaves lightly slapped between your palms to release aroma, a lime wedge on the rim, and optionally a small sprinkle of toasted coconut flakes on top. Serve immediately with a straw.
