Prepare glass (optional)

If you want a sugared rim, rub a lemon wedge around the outer rim of a large wine glass or stemmed glass, then dip the rim lightly into a small plate of coarse sugar to coat. Chill the glass for 2–3 minutes while you prepare the drink.

Build the drink

Fill the prepared glass about three-quarters full with ice (approximately 1 cup). Pour 2 oz limoncello over the ice, then add 0.5 oz fresh lemon juice and 0.25 oz simple syrup. Gently stir once or twice with a bar spoon to combine and slightly chill the mixture.

Top with bubbles

Carefully pour 3 oz chilled prosecco into the glass so as not to disturb the bubbles too much. Finish by adding 1 oz chilled club soda to lengthen the drink and add effervescence. Give a very gentle one-turn stir to incorporate.

Garnish and serve

Float a lemon wheel or thin lemon slice on the surface and add a fresh mint sprig if using. Serve immediately with a straw or stirrer. Adjust sweetness to taste by adding an extra 0.25 oz simple syrup if desired.
