Method
Hard‑boiled eggs & filling
Cook the eggs
Place 8 large eggs in a single layer in a medium saucepan and add cold water to cover by 1 inch. Bring to a gentle boil over medium-high heat. Once boiling, cover the pot and remove from heat. Let sit, covered, for 10 minutes. After 10 minutes, transfer eggs to an ice bath for 5 minutes to stop cooking. Cool completely.
Peel and halve
Tap each cooled egg gently to crack the shell all over, then peel under running water to remove shells cleanly. Pat dry with paper towels. Slice eggs in half lengthwise and remove yolks to a medium bowl; place whites on a serving platter and keep refrigerated until ready to fill.
Make yolk filling
Mash the yolks with a fork until mostly smooth. Add 1/2 cup mayonnaise, 1 tablespoon Dijon mustard, 1 teaspoon apple cider vinegar, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon smoked paprika and 1/2 teaspoon hot sauce (if using). Stir until creamy and well combined. Taste and adjust seasoning. Fold in 1 tablespoon minced fresh chives.
Pipe or spoon into whites
Transfer the yolk mixture to a piping bag fitted with a star or round tip (or use a resealable plastic bag with the corner snipped). Pipe or spoon an even amount into the cavity of each egg white. Keep finished eggs chilled on a platter until ready to top and serve.
Sugar‑cured bacon
Preheat oven to 400°F (205°C). Line a rimmed baking sheet with foil and place a wire rack on top. Lay 8 slices of thick‑cut bacon in a single layer on the rack. Evenly sprinkle 2 tablespoons brown sugar and 1/2 teaspoon coarse black pepper over the bacon. If desired, brush lightly with 1 teaspoon maple syrup for extra gloss.
Bake for 12–18 minutes, rotating the pan once, until bacon is crisp and caramelized but not burnt (time varies by thickness). Watch closely after 12 minutes. Remove bacon and transfer to a paper towel–lined plate to drain and cool. Once cool, chop into roughly 1/4‑inch pieces. Reserve until assembling the eggs.
Spiced pecans
In a small skillet over medium heat, melt 1 teaspoon unsalted butter. Add 1/2 cup pecan halves and toast, stirring frequently, for 2 minutes until fragrant. Add 1 teaspoon brown sugar, 1/4 teaspoon ground cinnamon, 1/8 teaspoon smoked paprika, 1/8 teaspoon salt and 1/16 teaspoon cayenne (if using). Continue to cook and stir for another 1–2 minutes until the sugar softens and coats the pecans. Remove from heat and spread on a small plate to cool.
Assembly & garnish
Sprinkle a light dusting of extra smoked paprika over the eggs for color and aroma. Add a few microgreens or a small tuft of baby arugula on each or around the platter for freshness and presentation.
Keep chilled and serve within 2 hours for best texture. Leftovers: store covered in the refrigerator up to 2 days; add pecans and bacon just before serving to retain crunch.
